I am in the process of drawing up a cheek riser unit that will clamp onto a bottle.
can i ask about dimensions?
if the bottle is 2 inch diameter, would the clamps need to be a nice snug slide on fit? and how much "groove/slit" would i need to aid the clamping?
lastly how thick would said "clamp/ring" to be be,for strength?

Depends on your printer tolerances.
I would undersize it by a little so that it has 0.6 to 1 mm of gap when on loose and then gives you a bit of space to tension the two sides together.

Alternatively, you can use something squishy to take up the slop.

Depends on how you want to increase the friction, self-adhesive friction tape on the bottle so that the sandpaper side rubs on the 3D printed part is a quick way. The squishy method above will.also increase friction.

Thickness probably 3 mm thick should be enough but will depend in the material and loading forces.
