Locks up really firm and feels good in the hand too.

Question is how to best sharpen and maintain a convex grind? Any tips guys?

Hi,
If you inspect the grind closely, you have got yourself a "faux" scandi-grind there, with a secondary bevel - absolutely nothing wrong with this, but it is not a true convex grind, and unless you effectively remove the secondary bevel, all you will need to do is maintain the edge in the normal manner, ie. with your favoured angled system, or stones.
That's a nice looking knife, enjoy :)

Nice knife ! I've had quite a few Victorinox over the years and never been disappointed with any of them, I think their experience with hard working butchers knives shines through.
