Ideally when resting a pellet on a flat surface on the top of the gun, when fired with a pellet chambered the pellet on top should move forward slightly. What does it mean if it goes backwards and how can I fix it. Cheers.

Nope, the backward movement of the pellet was with baracuda 15.

Recoil feels a little harsh, quite a twang from the spring, chronoing at high 11s. I know a little movement of the pellet forward is good, but what does backwards movement mean?

You have bounce.
Caused by the high start pressure of the heavy pellet.
Try a lighter pellet
7.87g if .177
13.43 if .22

If it still bounces with a lighter pellet should I change or do something with the original spring?

If spring is the thicker wire, 23 mm OD, then preload will be minimal to keep gun legal below 12 fpe.
Could try a short stroke or use a 20.4 OD spring with 3.1 mm wire.
